No Peek Chicken

Darlene bought me this gorgeous covered baker last Christmas.

I love it so much, but have hardly used it. So this past month I've taken it down from it's high shelf and made a point to try some new recipes in it.

The Fudge Cobbler I tried was an epic failure, so I decided to try a tried and true recipe next.

Darlene makes this for us and it is so yummy and easy, I thought I'd better share it!

All you need is...

  • a can of cream of celery soup
  • a can of cream of chicken soup
  • water
  • wild rice mix (with seasoning)
  • 3 chicken breast (cut in half)

This is so easy I feel silly writing it down!

Just mix the soups, one can of water, the rice and the seasonings in the baking dish. Lay your chicken on top and cover. Stick that baby in the oven at 350 for 2 hours.

Seriously, that's it.

It cooks the chicken perfectly and the rice and soup make an awesome gravy.

I walked out to my garden and snapped off a few green beans to steam up too!

There is nothing more satisfying then picking dinner from your yard!

Except only having one dish to clean after cooking a hot meal.

That makes for a happy woman!

Look Who Stopped By

One of my all time top wishes is that my Mom lived closed enough to just drop by whenever.

But those pesky 1200 miles seem to keep getting in the way.

Lucky for us, she's a flight attendant and sometimes gets long layovers in Atlanta.

Josie and I are always up for a quick 24 hour visit from Mae Mae.

I'm pretty sure Josie did not stop talking that entire 24 hours. Poor Mae Mae had just gotten off a 15 hour flight!

She's such a good sport!

We packed in a nice dinner, pedicures, tea parties, a few games of bingo and hungry hippos, and quite a few funny quotes from Josie.

Alphabet Summer

Josie and I have been seriously slackers in the school department these last few weeks. I thought about just stopping until the Fall, but Josie stills wakes up asking if we are doing any projects today, so I thought I'd better come up with something.

Eventually, we will have curriculum to follow, but since Josie is only 3, "school" is really just a few structured games and crafts. Andrew and I plan to Homeschool two or three days a week year round instead of taking a Summer Break every year. And since she is learning so fast, we figured now is as good a time as any to start our year round approach.

My type A personality needed a plan so I started my search. My only requirement is that our Summer schedule had to be relaxed, it had to be fun, and it had to be portable.

When I saw Alphabet Summer on J&A and Co. I knew it was perfect!

I improvised her plan just a bit. This is our folder.

Each letter has a tracing worksheet. Behind that is a blank sheet of paper to draw a picture of what we do. Every Tuesday and Friday we will go over a letter, draw a picture, and do an activity that starts with that letter.

Josie can already recognize all the letters, so we are going to use the Summer to work on learning the sounds they each make and start learning to write them.

I am excited for this. Especially since none of it is very time consuming and it is so portable. We have a few trips planned for this Summer and I am going to be able to just bring what we need with us and we won't get off schedule.

We started yesterday with I and making Ice Cream! Of course, I'll be blogging our Alphabet Summer!
