Homemade Corn Dogs

I love hot dogs.

I know, I know.

They are gross and nasty and made from who knows what.

But they taste like Heaven and I grew up with a father that would say, "Anybody want a hot dog?" at 10 am.

I'd say giving up hot dogs and coffee are my two biggest hurdles in this whole get healthy adventure I started.

When Andrew and I first started trying to eat right, we tried some uncured hot dogs that were supposed to be better for us and made from actually edible things.

They tasted so wrong and we were really sad.

So we went with the regular hot dogs and only had them once in a great while.

This Healthy Go Round, I was determined to find a way to eat a hot dog that wouldn't make my skin crawl.

Once again, Trader Joe's saved my hot dog loving soul.

These suckers taste exactly like a "real" hot dog.

I decided to make mini corn dogs and freeze them for quick lunches.

I had no clue how to make dough so I hunted around and found this recipe.

I wasn't sure how these were going to turn out, so I halved the recipe.

They were awesome and I will do a whole batch next time for sure.

For the dough, you just mix 3 1/2 cup whole wheat flour, 1 cup melted butter, 1 cup plain yogurt, and a dash of salt together.  Knead it until it's mixed.

I have no idea what "knead" means so I just squeezed mine and mixed it by hand.  It worked.

Then you roll out your dough.

If you're an actual adult, and not an impostor like me, you probably won't have to steal a rolling pin from your daughter's toy kitchen.

Cut it into squares and wrap your hot dogs up.

Bake at 350 degrees for 30 minutes.

Start to finish these took me 35 minutes.  10 minutes to make the dough and assemble, 25 minutes baking.

I taste tested 2 (they are way good!) and froze the rest.

Like I said, I halved the dough recipe and ended up with 12 mini corn dogs.

The hot dogs were $5 and the dough was pretty much nothing since I made it.

So for under $6, we have whole wheat mini corn dogs that I can pop in the oven on a busy day for a quick lunch.

I am a fan of healthy convenience!
