Layered Mexican Dinner!

In keeping with the changing season, we decided to change up our normal dinner menu with a few new recipes.

Last night I made a layered mexican dish that was delish.

So delish in fact, that my super picky, won't eat anything different, husband scraped his plate clean and proceeded to eat all the leftovers for lunch today.

That's what I call a recipe worth sharing!

The ingredients are super simple:

A pound of ground beef, a chopped up onion, a chopped up green pepper,

1 1/4 cup salsa, sour cream, 1 cup shredded cheddar (or slices if you forgot to get the shredded kind!), a bag of frozen corn, 3 tortillas, and 2 Tbsp chili powder.

And if you have a Super Eager To Help Sweetie Pie laying around, grab her too!

She makes cooking more fun!

Throw the meat, onion, and green pepper in a pan and brown it up.

Add chili powder and the salsa. Throw in the corn.

Let simmer for 5 minutes.

Then layer it in a casserole dish like this:

Meat sauce
Cheese
Tortilla (Ripped up to cover dish)
Sour Cream
Meat sauce
Cheese
Tortilla
Meat sauce
Tortilla

Cover with foil.

Bake at 375 for 25 minutes.

Uncover, sprinkle some more cheese, and put it back in the oven for a few minutes.

I served it up with some sour cream and ripped up spinach.
Cause I put spinach on everything.
It makes me feel like Popeye.

Your family will love it.

And if you follow it up with some fresh cooked pudding, they will like it even more!

You have a beautiful family. We thought about going with DFACS as well and may do it in the future, but I was initially afraid as well of reunification. I am so happy to see that things so quickly for you all. That is a blessing. We are in the same area.

I don't remember how I found your blog but I enjoy reading about your little family on the other side of the country.
Thanks for this awesome recipe! I threw it together after church yesterday and even my pickiest eater loved it! I substituted ground turkey and white corn tortillas and one of my girls said it would be good with chicken. It's definately going to be a regular in our house! Thanks again!
