I'm still in a bit of denial that my baby is 4.
But I know it's true because I spent this past weekend hosting 3 birthday parties for the little diva.
I had a hard time with our decision to keep her big Fancy Nancy Party all girls. So many of her buddies are boys.
So to make myself feel better, I threw together a Pizza Party on her actual birthday.
I'm about over cupcakes so I went on a mission to find a different cute treat to take their place.

And with this as the filling, they have to be good, right?!?!
Seriously easy to make and really yummy!
Plus, it's fun to say!

They were SO good!
I mixed in Blue Raspberry Sprinkles with the colored ones and it added the perfect flavor.
They are so yummy, I'll post the recipe at the bottom of this post.
Try them, you may ditch the cupcakes permanently.

WHOOPIE PIES
CAKES
- 2 Cups Flour
- 1/2 Cup Unsweetened Cocoa Powder
- 1 Tsp Baking Soda
- 1/2 Tsp Salt
- 1 Cup Buttermilk
- 1 Tsp Vanilla
- 1/2 Cup Butter
- 1 Cup Sugar
- 1 Egg
FILLING
- 1/2 Cup Butter
- 1 1/2 Cup Confectioners' Sugar
- 1 Cup Marshmellow Cream
Heat Oven to 350 degrees.
Grease 2 pans.
Mix flour, cocoa, baking soda, and salt. In another bowl, mix buttermilk and vanilla together.
In (yet another) bowl, beat butter and sugar until blended. Add the egg and mix until blended.
Pour half the flour mixture into the butter mixture. Mix.
Add the buttermilk mixture. Mix.
Add the rest of the flour. Mix.
Use a cookie scoop to place 9 heaping drops onto the cookie sheets.
Bake the cakes for 10 minutes. Let them cool for a couple minutes before you remove them from the sheets.
(They should be moist and spongey)
To make the filling, mix all the filling ingredients together until well blended.
Then just plop some filling on the bottom of a cake and top it off with another cake.
And as with pretty much everything we bake in The Pope House, we rolled ours in sprinkles!
Super easy. Super Yummy.

I love woopies! Haven't made them in forever- may make some in a few weeks- and I don't blame Josie- I flippin' hate the Birthday Song!!
